- Chalaco’s Ceviche & Pisco Bar, is opening up spring in Northern Liberties, influenced by the city of Callao and the Peruvian coastline. The restaurant will offer traditional Peruvian far like ceviche, lomo stir-fried steak and charbroiled chicken.
Chalaco's bar will boast a huge collection of pisco, a traditional Peruvian brandy which sours into pisco or :chilcanos" and combined alongside ginger ale and lime. The establishment will accommodate around 90 consumers in their main dining room, bar, lounge, and private room. The restaurant is located across the street from the Piazza at Schmidt’s Commons, in the space previously known as Bar Ferdinand.
