If you're the forgetful type that tends to cook your chops for a minute or two too long, brining them helps keep the meat moist. The key though is to pat the chops dry with paper towels before placing on the grill, this will help to sear them rather than steaming them, on the grill. Give it a try, using the recipe below

 Try This Pork Chop Brine:

  • 6 cups water
  • 1/4 cup cider vinegar
  • 1/4 cup firmly packed brown sugar
  • 1 tsp. dried thyme
  • 1 tsp. juniper berries (optional)
  • 1/8 tsp. red pepper flakes
  • 2 Tbs. kosher salt
  • 1 Tbs. freshly ground black pepper

Now lets make the brine, grab a large bowl, add water, vinegar, brown sugar, thyme, juniper berries, red pepper flakes, salt and black pepper. Stir the sugar and salt until they dissolve.

Put your pork chops in a large plastic bag and pour in the brine. now close the bag tight, squishing the brine around the meat and refrigerate the mix overnight.

Lastly, 30 minutes before you area ready to put the chops on the grilling, remove them from refrigerator. Drain out the  brine, rinse the chops with cold water and pat them dry with paper towels.

Now put them on the grill and enjoy!
