HOTEL DU PONT in Spring 2020Philadelphia, PA - The M Hotel Group and The Buccini/Pollin Group, Inc. will introduce a new concept to Wilmington’s storied HOTEL DU PONT in Spring 2020. The progressive French brasserie will be helmed by Chef-Partner Tyler Akin, a Wilmington native and the acclaimed restaurateur behind beloved Philadelphia concepts Stock and Res Ipsa Cafe.

Akin, like many Wilmingtonians, grew up frequenting the award-winning Green Room on service occasions and for many family celebrations throughout his childhood. Some of Chef’s earliest food memories were formed within the dining room’s grand walls and stayed with him throughout his career. His personal ties to the HOTEL DU PONT and broader Wilmington community, coupled with his impressive professional career, made Akin an obvious and unparalleled choice for the role.

The chef will design menus that showcase innovative riffs on French classics, from steak frites with bone marrow salsa verde to bouillabaisse with scallops, octopus, monkfish, and head-on shrimp with handmade Moroccan couscous, alongside ever-evolving seasonal offerings that showcase the vibrancy of Delaware foodways. The new restaurant will also include the famed almond macaroons, high tea service three days a week, and holiday and special occasion menus that bring back some of the earliest guests’ favorite dishes from over the years.

The restaurant, designed by Stokes Architecture & Design, boasts 125 seats with an intimate 14 seat bar, a private dining room, and seasonal outdoor patio seating on Rodney Square. The community sought to thoughtfully update the space to create a more pleasant atmosphere while still upholding the room’s elegant bones.
