PhillyBite10Despite the advent of gourmet hamburgers, 74 percent of Americans believe the basic cheeseburger best embodies the classic The All-American Hamburger.  But for the rest of us we enjoy our burgers spiced up like this easy to make Bleu Cheese Burger.

Blue Cheese Burger Ingredients

4 tablespoons cold pressed sesame oil, divided
2 medium yellow onions, thinly sliced
8-10 ounces grass-fed ground beef, divided
2 tablespoons pastured cream or milk
1 tablespoon aged balsamic vinegar
1 tablespoon tomato sauce or gluten and soy-free Worcestershire sauce
1/4 teaspoon sea salt and a twist of pepper
4 large leaves of red leaf butter lettuce
4 ounces raw cow’s milk bleu cheese (certified gluten-free)*
Burger garnishes: 1 garden tomato, thickly sliced.

Instructions

In a heavy-bottomed skillet heat 2 tablespoons of the sesame oil and slowly caramelize the onion slices until brown and creamy.



In a bowl combine the ground beef, caramelized onions (reserving ¾ of the onions for garnishing the finished burgers), cream, balsamic vinegar, and ketchup. Season with salt and a couple twists of pepper and mix well. Divide the mixture into two balls and then form into patties about 3/4–inch thick.

In a heavy-bottomed skillet heat the remaining 2 tablespoons of sesame oil over medium-high heat and brown the burgers for 1–2 minutes on each side. Rare is good.
