Garces takes his familiar, well-loved passion for international cooking and adds his own flair to the menu. Inspired by Garces' travels, Volvér's menu is ever-evolving and emphasizes seasonal ingredients prepared with modern techniques.
Initially, the restaurant was a high-end, prix-fixe-only concept. While Garces has continued to run the restaurant's culinary development, the menu has undergone a transformation. Rather than focusing on one particular menu, the concept has evolved into a relaxed, drop-in experience.
While it is still a five-star restaurant, it will be introducing a residency program for young Philadelphia chefs. The chef-in-residence program includes Kiki Aranita from Poi Dog Philly, Phila Lorn from Terrain Glen Mills, Jezabel Careaga from Jezabel's, Jennifer Zavala from Juana Tamale, Alex Yoon from Little Fish, and Dane DeMarco from Sonnys Cocktail Bar and Wine Dive.
The main dining room seats 30+ Guests, and the bar is open to the public and has a limited number of seats. The restaurant also is available for private events and offers special tasting menus for special occasions.
While the bar at Volvér has a walk-in service, and the main dining room requires reservations. However, the restaurant's upscale concept is unique in Philadelphia.
