New Vegan CheesesPhiladelphia, PA - Di Bruno Bros. is launching new vegan cheeses from a locally made company in Philadelphia called Conscious Cultures and Rind, made in Brooklyn, NY. Both brands will be available at four Di Bruno Bros. locations.


Di Bruno Bros. Is Launching New Vegan Cheeses

They invite all customers to come in and experience a full demonstration of their “Eat, Shop and Learn’’ philosophy while offering samples of Conscious Culture vegan cheeses at the Italian Market store, located at 930 South 9th Street, Philadelphia, PA 19147.

President, William Mignucci, Jr. says, “We celebrate great cheeses every day at Di Bruno Bros. However, we couldn’t share our passion with the vegan community with the dairy-based cheeses we historically offer. We finally found a way to offer plant-based products to our assortment and are excited to service the vegan community in Philadelphia with quality products and educate ourselves on the culture. We did it!”

Samples of locally made, Conscious Cultures Barncat and Maverick lines of soft cheeses will be served on Saturday, May 28, 2022, from 11 A.M. to 2 P.M. at the Italian Market location.   Philadelphian and owner of Conscious Cultures, Bo Babaki began experimenting with his vegan cheese creations back in 2018 and received a glowing review in the New York Times last Spring.

Conscious Cultures uses one of the most distinct approaches is a cave- aging their cashew and coconut oil-based cheeses, yielding an earthier and much more complex depth of flavor than many plant-based dairy items. Barn Cat and Maverick wheel are surface-inoculated with Penicillium candidum, a culture typically used to ripen brie and camembert. These wheels are then aged for two to three weeks in an environment replicating a traditional cheese ripening room. Bo’s “cheeses” are tangy and bright with a slight minerally finish and a downy, pillow-like texture.



Conscious Cultures and Rind products will be available at the cheese cave at Rittenhouse, Wayne, Italian Market, and Ardmore locations. A variety of soft cheese and spreads will be available.
