Chef Michael Brenfleck Opens Little Walter's

Little Walter's is a deeply personal project for Chef Brenfleck.  Inspired by his grandfather, "Little Walter," whose parents immigrated from Eastern Europe, this restaurant is a tribute to his family's heritage and a passionate exploration of the vibrant flavors of Poland.

"Growing up, I loved the Polish traditions within my family, especially 'Wiglia,' the traditional Christmas Eve supper," says Chef Brenfleck. "That feast instilled a passion for pierogi and other classic dishes. I can't wait to share my love for this cuisine with Philadelphia."

Little Walter's won't be serving the heavy, old-school Polish food you might find at a church supper. Brenfleck aims for a fresh, modern approach while honoring the soulfulness and rich flavors of traditional Polish cooking. Here's a glimpse of what to expect:

  • Pierogi, Naturally: Pillowy pockets of potato and farmer's cheese served with the classic accompaniments.
  • Hearty Classics: Explore dishes like 'Golabki' (cabbage rolls), 'Kotlet Schabowy' (a breaded chicken cutlet), and 'Wieprzowina z Rożna' (rotisserie pork shoulder).
  • Housemade Staples: Fresh sourdough rye bread, cultured butter...the perfect foundation for a delicious meal.
  • And, of course, Kielbasa! No Polish menu would be complete without this savory sausage.

The beverage program at Little Walter's promises to be equally exciting. Expect imaginative craft cocktails that incorporate Polish spirits and flavors, each named after a traditional Polish profession. Choices include:

  • Piłkarz (Footballer): A pickle juice martini? This adventurous tale is sure to stir conversation!
  • Pszczelarz (Beekeeper): Honey, Meyer lemon, nasturtium – a floral and refreshing sipper.
  • Żubr Cocktail: A tribute to the iconic Polish vodka, Żubrowska.

Chef Michael Brenfleck brings 15 years of experience in the Philadelphia restaurant scene to this venture. With stints at notable spots like Spice Finch and previous pop-up events highlighting his Polish concept, he's earned a reputation for culinary creativity and a deep respect for tradition.
