Rosa Mexicano In Suburban Square ArdmorePhiladelphia, PAGetting a reservation at Rosa Mexicano in Suburban Square, Ardmore's newest restaurant, is challenging but well worth the effort. We had dinner today at 4 p.m. I knew it would be awesome when Cheryl Boles, Rosa Mexicano's floor manager, greeted us at the door. Cheryl's mother, Helen, was such an elegant and fashionable lady—Cheryl treated us special like her mom.

Naveen and I were seated in the stylish room with vaulted ceilings to the right. The windows open to the exterior patio. Real estate attorney Shawn Lynch, who had eaten at their Manhattan restaurant, highly recommended ordering the guacamole. He was right. It was the best guacamole I have ever had; it has been made tableside since 1984 and is made fresh to order with warm corn tortilla chips and roasted tomato salsa. We did ask for mild. Cheryl got things prepped, and then Chef Manuel Trevino, Vice President of Culinary, took over and made The Guac. Shawn has assured me that it is always fantastic.

Our waitress, Ina Kunicki, was very knowledgeable about the menu and encouraged us to start with Rosa Mexicano's specialty drinks. I tried the signature pomegranate hibiscus frozen margarita. Naveen had a Cielo Rosa straight up, which included Milagro Blanco Tequila, pomegranate, house-made ancho chile-spiced Grenadine, fresh lime, lime zest, and a salt rim. We both enjoyed our drinks.



For dinner, we decided to share. We ordered Camarones al Mojo de Ajo, Jumbo shrimp, chorizo, fideo noodles, avocado, and chile guajillo-lobster butter sauce. This was Naveen's favorite, and I liked it too. We also had the beef brisket enchiladas, which had more of a kick. They had classic red guajillo chile sauce, Cotija cheese, Chihuahua cheese, shaved cabbage, and pico de gallo. They also brought delicious Mexican rice, which was also very tasty.

At this point, General Manager Brian Harmon gave me a restaurant tour. Don't be surprised if we host a Dine and Dish or a Tasty Talks here this fall. I appreciate it because I always look for restaurants to host dining and dishes.



Naveen was full, but I was all in when I heard they had Tres Leches dessert. This classic sponge cake is soaked in three different kinds of milk and topped with fresh strawberries - Naveen was full but agreed to try a bite. It was so good that he had a second bite; the rest is history. As many know, I love The Pub at Penn Valleys Tres Leches. I still love the Pub at Penn Valley's Tres Leches and Rosa Tres Leches, which is different. My heart is big enough to love both. Lauren DiMartino was at the following table, and I recommended that she share it with her friends. I am confident that it is that good!
