Laura and Ed plan to add in a full kitchen for cheesesteaks and grab & go prepared meals like eggplant parmesan, meatballs, and chicken cutlets and adding in ice cream.

Laura and Ed are also Mont Clare, PA residents. Laura says: "We are excited to represent the Village of Mont Clare, as it sometimes gets overlooked because it is so small. Our hope is people will stop by, take in our small village and get to know us." Simpson says: "Our goal is to open by mid-November, as long as our permit approvals, contractors, and equipment needs are met. We are anxious to get open and share our family traditions."

The deli will be serving the classic "Eagles Nest" sandwiches and zeps. They also plan to add cheesesteaks, grab & go prepared foods, more extensive breakfast and coffee selection, pastry, and a smoker and outdoor seating in the spring of 2022. Vegan and gluten-free options will be available.
