Red Owl Prickly Pear Winter Gose by Dock Street

Their first brew — Red Owl Prickly Pear Winter Gose by Dock Street — is a double gose, easy drinking and relatively low alcohol for a double at about 6% with an IBU of 15.

“We wanted to make the best beer we could for the season, Candeloro said. “Caitlin thought of incorporating the prickly pear into the gose style.”

Dock Street Brewer Mark Russell oversaw the production of the beer and provided these brewing notes: pouring a deep pink with a tinged white head, the appearance of this beer is striking. A mild aroma of tart fruit leads to clear flavors of prickly pear and hints of watermelon. Light bodied and dry, the slight sweetness in this beer is balanced by a tart finish typical of a Gose style. Refreshing, drinkable, and alluring.

Dock Street is Red Owl Tavern’s Brewer of the Month and is offering the Red Owl Prickly Pear Winter Gose by Dock Street for just $5 throughout the month.

Chef Caitlin suggests pairing the duck confit or other hearty and delicious dishes from Red Owl Tavern’s just-released new menus under her direction.



“We want this to be an ongoing series of collaborative beers,” Mateo said. “Next we’ll do something towards the end of March for Spring. The Red Owl Prickly Pear Winter Gose by Dock Street will be on tap here all winter.”
